Sometimes you want the tastes of Thanksgiving, but not all of the fuss and mess. If that’s what you’re feeling for dinner tonight, then this recipe is for you! It’s super easy, and honestly tastes just like Thanksgiving!
I imagine you can also adapt it to use your leftovers from Thanksgiving too. Just layer in whatever you want, and heat them through in the Crock Pot. I might try that on Friday…..
Thanksgiving in the Crock Pot
1-2 lbs. chicken breasts
1-2 bags frozen vegetables
1 large can Cream of Chicken soup
1-2 packages Stuffing mix
- Prepare your stuffing according to the directions. Or make your own stuffing, per your recipe.
- Layer the chicken in the bottom of the crock pot first, followed by veggies, soup and stuffing on the top.
- Cover and cook on High for 4 hours, or Low for 8 hours, until the chicken is cooked through and falling apart.
Note: this is a very flexible recipe so you can use as much or little of the veggies, soup and stuffing as you’d like. Also, you could use fresh veggies, but the frozen help keep everything moist.
